Quick and Delicious Spinach Cakes Recipe

Spinach Pie Cup-Cakes
This yummy and unique dish, is a cross between Spanakopita (Greek spinach pie) and an Italian spinach pinwheel that you can buy in many Pizzerias. I like to make these as an appetizer or side dish. The next time you’re invited to a party or holiday dinner, whip these up and your host will most definitely invite you back!
What you will need:
• *Wonton wrappers (you can find these in most supermarkets, in the produce section)
• (2) 8 ounce boxes of frozen spinach
• 8 ounces of shredded mozzarella cheese
• 8 ounces of crumbled feta cheese
• A lot of oregano (approximately 2 Tbsp.)
• Garlic powder (sprinkle liberally)
• Onion powder (sprinkle liberally)
• Lemon juice (about 2 Tbsp.)
• Salt & Pepper

To prepare:
- Microwave one box of frozen spinach for 4 minutes on high.
- Repeat with second box.
- Squeeze out most of the water from the spinach, and place in bowl.
- Add the mozzarella cheese, feta cheese, oregano, garlic powder, onion powder, lemon juice and salt and pepper, to taste.
- Mix well.
- Take one wonton wrapper and place in bottom of each muffin tin circle. Add spinach mixture to each.
- Repeat with another wrapper and mixture. Usually you can get 2 tiers per cup.
- Bake at 300° for approximately 15 minutes. The ends of the wrappers will burn quickly, so keep an eye on the tray frequently. Or, you can also cover with aluminum foil for the 1st 10 minutes and then remove foil for last 5 minutes. Oven temperatures may vary so the timing may be different.
